Recipes

I had a couple good ideas about starting a page to share recipe's, especially kid friendly ones. I am looking into that but it will take some work that we (and by that I mean Kris) do not have time to set it up at this point.

I would love to hear about some recipes since Caroline can be a picky eater. I did link a website that I found some good recipes. I will try some and let you know and I would appreciate the same.

At this point, Grace finds her food particularly satisfying. As you can see in the following picture, she cannot contain the excitement over her last meal.

I know what you mean about Caroline being a picky eater, Zoe's the same way!! She loves chicken nuggets, but would pick cubed chicken out of any casserole I made...so I started to shred it and she didn't know the difference! Try this one, it's a variation on Tuna Noodle Hotdish

CHICKEN NOODLE HOTDISH
1 chicken breast, cooked & shredded
1 8 oz. bag shredded cheese (any kind: CoJack, Pizza, Taco, 3 Cheese...)
1 can Cream of Chicken soup
1½ cups pasta (I like to use Tri-color Rotini, Cremette's Kid Springs, or Ditalini-something fun for the kids)
*1½ cups pasta is about ¾ of a box (1# size)
1 cup milk (approx)

Place the chicken on a foil lined pan, sprinkle with olive oil (and your choice of seasonings) and bake at 350° for about 35-40 minutes, or until the chicken is done. Let sit for a few minutes before starting to shred. (It's easier to shred when it's warm.) Cook pasta and drain. Place all ingredients into a bowl and mix. Put mixed ingredients into your choice of casserole pan and bake at 350° for 45 minute to an hour. Serves 4-6

I normally cook off a couple chicken breasts at a time, shred them and pop them in the freezer. I also have shredded cheese on hand (in the freezer-no need to thaw) too, so all i have to do is cook off the pasta and throw it in the oven! To keep the olive oil from going everywhere on the pan, bring the sides up and pinch the corners together--works great for cleanup!! I also put olive oil and seasonings (garlic salt, basil) in the pasta water. Enjoy!!
